摘要(Abstract):
对大豆异黄酮的结构性能进行了论述,并采用高效液相色谱法(HPLC)对大豆蛋白复合纤维中异黄酮含量进行了检测分析。结果表明:异黄酮主要以糖苷型结构存在于大豆蛋白复合纤维分子中;经洗涤后,异黄酮含量仍然很高。
The structure and property of soybean isoflavones were expounded. The content of isoflavones in soybean protein composite fiber was determined by HPLC. The results showed that isoflavones in the form of glucosides existed in soybean protein composite fiber and the content of isflavones kept high level after washing.
